Magical Grapes with Chef Virgilio Martinez is back for the fifth consecutive season. Rose worked with Seiji and Chiho Morimoto of Magical Grapes Farm to showcase their picture-perfect Shinano Smiles. Native to Japan, this precious “gifting” grape is prized for its fragrant juiciness and challenging cultivation. In California, Seiji and Chiho grow their garnet-colored, transparent Shinanos in individually wrapped bunches on custom trellises to maintain their shape and immaculate appearance. We collaborated with Chef Virgilio to highlight the grapes’ sweet, grassy flavor with hand-muddled ginger and pink pepper, and honor Seiji and Chiho’s tireless dedication to this fickle fruit.
